Frozen Yogurt with Cherries and Almonds

Ice cream season is upon us! You’re going to be making a lot of decisions about how much of which frozen desserts you’re going to eat, and not eat. This is one you don’t have to feel guilty about!

Just plain yogurt sweetened with a little maple syrup, topped with cherries and almonds. Have all you want! I used full fat yogurt, because I was worried about ice forming in the frozen yogurt if it had too much water in it. Although, a lot of people have had success using low fat greek yogurt.

The recipe for this basic frozen yogurt is so clean, it only has 3 ingredients! All you need is an ice cream maker. This was the first recipe I in my new cuisinart, and I was amazed at how easy it was! It went from liquid yogurt to a tasty frozen treat, in less than 30 minutes!

You guys, this is my first frozen dessert post, and I’m baffled! I knew the frozen yogurt was going to melt fast, so I turned up the air conditioning, and got everything set up and in the right place. All that I would have to do is scoop the it in the bowls and go. It melted instantaneously! I grabbed my camera and looked down and the sides of the servings were already starting to melt!

How do they do it at the fro-yo shops? are there stabilizers or something in their product that make them not melt as fast? I felt like a National Geographic photographer trying to get a picture of some endangered creature that lives 1,000 miles deep in a forest and only comes out at night.

Some day I’ll catch the elusive fully frozen frozen yogurt….someday! In the meantime we will just have to distract ourselves with slivered almonds and compote made from fresh cherries!

Obviously, you could customize this fro-yo a thousand and one different ways (this time I’m under exaggerating)!

I was thinking about how fun it would be to have a pool party or a BBQ with a homemade frozen yogurt bar and all kinds of toppings!

Fresh fruit, cereal, candy, syrups, nuts…

Then you could give yourself a name. If Pinkberry  and Redmango have taught us anything, all we need to do is combine our favorite color and favorite fruit and we have our chain name. Mine would be Purpleblackberry. That one doesn’t quite roll off the tongue too well does it?

What would your yogurt chain be called?

Serves: 8
Ingredients
  • FROZEN YOGURT:
  • 5 cups greek yogurt
  • ¼ cup maple syrup
  • 1 tbl vanilla bean paste or extract
  • ½ cup slivered almonds
  • CHERRY COMPOTE:
  • 3 cups fresh cherries, cut in half and pitted
  • ¼ cup maple syrup
  • ½ tsp almond extract
  • 1 tbl cornstarch
  • ¼ cup water
Instructions
  1. FROZEN YOGURT:
  2. Combine all ingredients in a medium sized bowl. Chill for at least 3 hours or overnight.
  3. Add ingredients to ice cream maker and process according to your ice cream maker's instructions. Let ice cream maker go about 20-25 minutes, or until yogurt is frozen enough to hold it's shape, but before it gets icey. Top with cherry compote and almonds and serve immediately.
  4. CHERRY COMPOTE:
  5. Add cherries, water, and maple syrup to a medium sauce pan over medium heat and stir until mixture is hot and liquid is reduced by about half, 5-10 minutes.
  6. Set a fine mesh strainer over a medium bowl and strain cherry mixture through it until most of the juice comes out. Set cherries aside.
  7. Whisk cornstarch into hot liquid until it is dissolved. Add liquid and cherries back to saucepan and cook on medium heat again until mixture begins to thicken and coats the back of a spoon. Add almond extract and stir to combine.
  8. Let cool to room temperature before adding to frozen yogurt.

I love that this uses maple syrup instead of refined sugar. I can’t wait to use it in my thrift store ice cream maker (that works quite well). My yogurt chain would be called Yellowmango. Has that been taken? It was hard to come up with a favorite fruit, since there is no fruit out there that I do not LOVE!!!!!

I love that your thrift store ice cream maker works well. It doesn’t have to be expensive to make ice cream at home! There’s Redmango here in TX, but so far I’ve not seen Yellowmango. Better go copyright that quick 😉
