Oh how I love one pan (or pot) meals.

Less dishes, less fuss and so many tasty flavors all together makes them the perfect option for weeknight dinners. They are also a good way to stay on track with our New Year’s resolutions to eat healthier. There are about a million ways to make meat and veggies in one pan. What could be a healthier and more balanced than that?

Ok, maybe salad, but let’s be real, that’s not happening EVERY night.

I really love brussel sprouts, as I’ve already shown you with Bacon Cranberry Brussel Sprout Medley and Roast Chicken with Harvest Vegetables (another good one pot meal).

They’re delicious AND currently in season, so I can get them at farmer’s market πŸ™‚

We are overflowing with citrus from our trees, so I decided to use lemons for the acidic punch (I have a hard time making chicken without citrus.)

With brussel sprouts, balsamic, citrus, honey, and a smoky spice blend on our drumsticks. This dish will warm you up with all it’s roasted goodness!

This paprika/garlic spice mixture, or a variation of it, is my go to poultry seasoning. I just love what paprika does to the chicken flavor, and how it enhances the browning effect. I usually use smoked paprika.

I used shallots instead of onions for a more delicate flavor. There was already a lot of boldness going on in the dish, and I figured shallots might be a nice change from huge chunks of regular onion.

While it’s true that you don’t want to necessarily eat all the lemons, they look pretty on the plate, and they impart the BEST flavor to the brussel sprouts.

Taylor, not the biggest fan of the teensy cruciferous vegetables, told me last night that they were “The most flavorful brussel sprouts you’ve made” He wasn’t quite ready to say that he liked them, but he at least could acknowledge that they weren’t bland. πŸ™‚

Serves: 6-8
Ingredients
  • 10 chicken drumsticks
  • 2 tbl vegetable oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 2 tsp smoked paprika
  • 3 medium lemons, sliced thinly
  • 2 lbs brussel sprouts, ends trimmed and cut in half
  • 3 shallots, sliced thinly
  • 1 tbl olive oil
  • juice of ½ lemon
  • 3 tbl balsamic vinegar
  • 1 tbl honey
Instructions
  1. Pre-heat oven to 400 degrees
  2. Line a rimmed baking sheet with parchment paper.
  3. In a large bowl, combine brussel sprouts, lemons, shallots, olive oil, lemon juice, balsamic vinegar, and honey.
  4. Transfer brussel sprout mixture to baking sheet.
  5. Combine salt, pepper, paprika, and garlic powder in a small bowl. Set aside.
  6. Transfer drumsticks to sheet pan. Lay on top of brussel sprout mixture. Rub with olive oil and coat with spice mixture.
  7. Bake for 40-45 minutes, or until juices run clear and a thermometer reads 165 when inserted into the thickest part of the leg.
