Bacon Wrapped Dates

Ingredients
  • 12 medjool dates, pitted
  • 6 slices of thick cut, applewood smoked bacon, each slice cut in half
  • ¼ cup coconut sugar (you can substitute brown sugar)
  • *12 toothpicks*
Instructions
  1. Pre-heat oven to 400 degrees.
  2. Line a standard size jelly roll pan with parchment paper, and place oven safe cooling rack on top of parchment paper.
  3. Wrap each date in a half strip of bacon. You want the seam to be underneath the date, touching the cooling rack. Press each date firmly with the seam side down, so it is a little flat on the bottom. This will help the dates not to roll around and unravel in the oven. You can skewer them with toothpicks now, or after the first session of baking.
  4. Once you get them all on the cooling rack, sprinkle with sugar. Don't be afraid to pile it high. A lot of the sugar will melt off in the oven.
  5. Bake at 400 degrees for 20 minutes, remove from the oven, flip with tongs and skewer with toothpicks if you haven't already.
  6. Bake again for 10-15 minutes or until they are browned and crispy on both sides.
