Chocolate Chew Cookies

Ingredients
  • 12 oz chocolate chips
  • 1 cup butter, softened
  • 2 cups + ½ cup granulated sugar
  • 4 eggs
  • 2 tsp vanilla bean paste or extract
  • 4 cups all-purpose flour
  • ½ tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
Instructions
  1. Pre-heat oven to 350 degrees. Line two cookie sheets with parchment paper.
  2. In the bowl of a stand mixer, fitted with paddle attachment, add butter and process at medium speed for one minute. Add 2 cups sugar and cream together at medium speed for 4-5 minutes, or until the mixture is light and fluffy.
  3. Melt chocolate in double boiler or in microwave and let cool for 5 minutes.
  4. Change mixer to lowest setting and add eggs, one at a time until they are all combined. Add vanilla and chocolate, change mixer to medium speed and combine. Turn off mixer, scrape the sides of the bow,l and mix briefly one more time to make sure it is fully combined.
  5. In a large bowl, combine flour, baking soda, baking powder, and salt and combine.
  6. Add chocolate butter mixture to flour mixture and stir until just combined.
  7. Add ½ cup sugar to a small bowl
  8. Using a large cookie scoop, or a spoon, portion out 2 tbl cookie dough pieces and roll each ball in the sugar.
  9. Place balls of dough on cookie sheet at least 2 inches apart, and bake in oven for 12-14 minutes, or until tops are crunchy and middles are soft, not liquid when pressed.
  10. Let cool 5 minutes, and then remove to cooling rack to finish cooling.
